Covered by the PDO since 1981.
The production area of this product includes the City of Cabrales and some villages in the municipality of Alta Peñamellera, both Asturias.
The milk used in its preparation, is obtained exclusively from the herds of cows, sheep and goats registered with the Protected Designation of Origin. The cattle of the milk obtained is fed into mountain pastures.
This cheese is hand-crafted by farmers from Cabrales, or any of the three towns bordering Peñamellera High who also belong to the denomination, and is made from raw cow's milk or mixture of two or three kinds of milk: cattle, sheep and goats.
At the end of their maturation, the cheese has the following characteristics:
- Form cylindrical, 7-15 cm. height, diameter and weight variable.
- Soft bark, slender, creamy gray with yellow-red zones.
- Pasta creamy consistency, with different degrees of cohesion, compact and without eyes.
- Fat not less than 45% of the dry.
- Minimum humidity 30%.
